What's the difference?
Real lumpwood charcoal is exactly what it sounds like — natural wood that's been charred down to pure carbon, with no additives or binders. You'll notice it comes in irregular chunks and pieces, since it's made directly from real wood rather than being manufactured into a uniform shape.
Briquettes are made by compressing charcoal dust and other materials into a uniform, consistent shape — usually a pillow or brick form. This manufacturing process means they burn in a more predictable, controlled way.
Lighting speed
Lumpwood charcoal generally lights faster than briquettes — its irregular shape and lower density means air gets to it more easily, helping it catch quicker. If you're impatient to get cooking (or have hungry guests waiting), lumpwood has the edge here.
Burn time and consistency
This is where briquettes pull ahead. Their dense, uniform shape means they burn for longer and more consistently, holding a steady temperature for extended cooking sessions. If you're slow-cooking, doing a long BBQ session, or want predictable heat without much fiddling, briquettes are the more reliable choice.
Lumpwood burns hotter initially but can be less consistent and tends to burn through quicker — great for a shorter, hotter cook but less ideal if you want sustained heat over a few hours.
Flavour
Many BBQ enthusiasts prefer real lumpwood for the flavour it imparts — being pure wood with no additives, it's generally considered to give a cleaner, more natural smoky taste to food. Briquettes, depending on the brand and binding agents used, can occasionally affect flavour slightly, though good quality briquettes are designed to minimise this.
